Instaurator and espresso coffee
Instaurator is one of the more interesting people on the Australian coffee scene. That’s his name: ‘Instaurator’. He changed to that by deed poll a few years back, taking part of his family’s clan motto: “Instaurator ruinae” which means a restorer of ruins.
He’s been involved in the coffee scene in Oz since his Uni days, and has been at different times, director of Michel’s Espresso in Granville, Australia, former Chairman of the Australian Coffee & Tea Association, a founder of the Australasian Specialty Coffee Association, and a World Barista Championship Judge…

Espresso machines and the three way valve
One of the great, but little understood features of many good home espresso machines is the humble three-way valve.
Basically, when an espresso machine is actually brewing the shot, it is pushing water through the coffee grounds at ~9 bar (9 x atmospheric pressure).
When the pump is turned off, miuch of that pressure remains in the group head and portafilter. If there wasn’t a way to relieve that pressure, you would get a hot and nasty surprise when you removed the portafilter to remove the coffee puck.
Plumbed in Minore
In the Brewtus Group forum (Brewtus being the name of the Barista Minore in the U.S.) there was much interest when I mentioned that I had seen the prototype of a plumbed-in, rotary pump version here in Oz.
